I usually read via email, unless there's an image I want to take a closer look at - in that case, I switch to the web version. As for the media player, it's up to you. Just keep in mind that if you use Substack's built-in player, I believe you won’t get YouTube views. So, if boosting view count is a priority, maybe go with the YouTube player instead?
I read via email (usually but not always on mobile), and so have a significant preference for YouTube. When I open the Substack video links via email, it just opens the app and puts me at the top of the newsletter, so I have to scroll to find the video again, which is just bad UX.
I read the newsletter via e-mail (outlook webclient), so in either case (Youtube embed or Substack player), it doesn't play natively and opens a new tab. A youtube embed opens the video directly, while a substack embed opens the newsletter edition and is hit-or-miss whether it automatically snaps the scroll down to where the video is or not
